Thank you and Recipe

Thank you to all our customers that joined us last night for ladies nite! several people asked for the recipe for the coconut balls so here it is. And I hope to hear back from any of you about how to improve for our future events!

These are called 'Skillet Cookies' (i think they need a better name!)

1 stick butter
1 cup sugar
1 egg
1 box or bag of chopped dates
1 cup pecans
2 cups rice krispies
1 tsp vanilla

Place butter, sugar, egg and chopped dates in a pan and cook for 5 minutes or until dates are dissolved. Remove from heat, add vanilla, rice crispies and pecans. When cool enough to handle, roll in coconut after shaping it into a small log shaped or round cookies.

Someone last nite said their grandmother had a similar recipe using powdered sugar, which i would to try. And someone said the wassail had too much rum(1/2 cup) and another said they could not taste the rum..... oh well! We did set off a wish lantern about 8 oclock, and they are so pretty when they go up, but gotta watch, don't do it when it's windy and make sure you hold onto it for a bit longer than you think necessary, then it will go up better.
